Ingredients
1. 3–4 medium zucchinis, washed and sliced (into rounds, wedges, or Hasselback style)
2. 4 tablespoons butter, melted
3. 1 cup grated Parmesan cheese
4. 1 tablespoon minced garlic or garlic powder
5. 1 teaspoon Italian seasoning
6. 1/2 teaspoon freshly cracked black pepper
7. 1 teaspoon salt
Instructions
1. Preheat your oven to 400°F (200°C).
2. Slice zucchinis into discs or lengthwise.
3. In a bowl, mix melted butter, garlic, Parmesan, Italian seasoning, salt, and pepper. Coat zucchini evenly. Add mozzarella if desired.
4. Arrange zucchini in a single layer on a baking sheet or skillet. Roast uncovered for 15–30 minutes, depending on thickness, until crispy edges.
